Food safety and security
 

Food safety is an important issue both in terms of prevention, and detection and removal (if possible) of harmful contaminants. Some harmful contaminants are naturally occurring whereas some result from intentional adulteration. CINVESTAV-Irapuato researchers have developed techniques for detecting food contaminants and determining food compositions.

Dra. Doralinda Asunción Guzmán Ortíz – Dra. Guzmán has developed methods for chemical inactivation of aflatoxins in corn, sorghum and peanuts. Aflatoxins are chemicals produced by certain molds (Aspergillus flavus and Aspergillus parasiticus) which grow in various substances, including grains and peanuts, and are also found when these crops are improperly stored. Aflatoxins enter the general food supply when the crops are processed into foods.  (Link to information sheet)
