Food products/ nutraceuticals


Foods having nutraceutical properties are foods that provide nourishment and in addition help prevent or control disease or illness.

Dr. Edmundo Lozoya Gloria – Dr. Lozoya has developed technology to provide perishable fruit, such as strawberries, having increased concentration of flavonoids, such as phenols and anthocyanins, and increased antioxidant capacity. The technology allows improved postharvest quality of fruits and provides a better way to store and transport fruits. (Link to information sheet)

Dra. Mercedes Guadalupe López Pérez- Dra. Lopez’s research focuses on fructans found in agave and the use of agave components as probiotics and supplements. (Link to information sheet)

Dra. Gertrud Lund - Dra. Lund conducts research on beneficial fatty acids, particularly arachidonic and oleic acid. (Link to information sheet)
