Biotecnología agroalimentaria de materiales de origen mesoamericano. Mejoramiento por biotecnología molecular de las características nutricionales, funcionales, sensoriales y de maduración de materiales agrícolas de interés alimentario y nutracéutico; expresión en diversos vectores y modificación molecular y estructural de macromoléculas de importancia alimentaria, nutracéutica y medicinal.
